Tencha is the shaded, steamed leaf product that is stone-milled into matcha. Tanjore (Thanjavur) is not a traditional tea-growing region: it is hot, low-elevation and has different pests, water and soil behaviour than hill tea areas. That makes tencha possible but it requires microclimate management—shade, irrigation, and careful cultivar choice—and realistic marketing plans. This guide focuses on practical, actionable steps from sowing to selling.

Site selection and microclimate

  • Choose sites with some natural wind protection and access to reliable irrigation. Flat river plains in Tanjore can be used if you can create shade and control humidity.
  • Avoid waterlogged soils. Tea prefers free-draining soils with good tilth; heavy clay needs deep loosening or raised beds.
  • Ideal microclimate: consistent soil moisture, reduced daytime radiation during the shading phase, and moderate humidity at harvest. You will have to create this with shade nets, mulching and irrigation scheduling.

Varieties and planting material

  • Shade material: use black or green polyethylene shade netting that gives 70–90% shade; crop response will vary—start trials at 70–80% and adjust.
  • Structure: simple poles and crossbars with nets are common in lowland farms. Ensure good ventilation under the net to reduce humidity pockets that cause disease.
  • Water: shaded plants still need steady moisture; shaded leaf can wilt quickly if irrigation is inadequate.

Pests, diseases and field hygiene

  • Steaming: Immediately after plucking, steam leaves to inactivate oxidising enzymes. Typical on-farm practice is quick, evenly applied steam rather than pan-firing. Aim for a uniform, brief steaming to stop oxidation but not overcook leaf.
  • Cooling and gentle drying: After steaming, cool leaves and apply low-temperature drying to reduce moisture to a stable level. Avoid high heat that browns the leaf.
  • De-stemming (tencha leaves are destemmed after drying): Remove thick veins and stems by mechanical or manual sorting—matcha demands a pure leaf powder.
  • Milling to matcha: Tencha must be stone-milled to very fine particle size. This usually requires specialized equipment or a contract with a mill that handles small batches gently to preserve colour and aroma.

  • Run a small pilot plot (few hundred square metres) to test clones, shade levels and processing logistics before expanding.
  • Secure access to a steaming rig and a stone mill or a contract mill partner.
  • Plan irrigation and shading structures with local materials and be ready to adjust shade percentage after the first trial harvest.
  • Build linkages with specialty buyers early—samples and clear production records will help you get a fair price.
