Why Tencha (Matcha) in Madurai?

Madurai’s semi-arid climate and warm winters are different from Japan’s traditional tea regions, but with careful site selection, shade management and irrigation, producing tencha leaf for stone-ground matcha is feasible. Tencha is shade-grown, steamed and de-stemmed leaf intended for grinding; its value comes from concentrated amino acids, bright colour and fine texture rather than bulk green-tea yields.

Choosing a Variety

Matcha-quality tencha requires cultivars bred for shading and high theanine and chlorophyll. Consider sourcing certified Japanese matcha cultivars used for tencha — examples include Yabukita, Samidori and Okumidori — from reputable nurseries or research stations. If Japanese nursery stock is unavailable, select Camellia sinensis var. sinensis clones known locally for tender flushes and good flavour when shaded. Always bring plant material through quarantine and use disease-free planting material.

Site Selection and Soil

  • Choose a site with good drainage and access to reliable irrigation. Tencha production demands consistent soil moisture during shading and leaf development.
  • Soil texture: loamy to sandy-loam soils with moderate organic matter are easiest to manage. Heavy waterlogging spells disaster for young plants.
  • Perform a soil test (pH and nutrient analysis). Tea does best in slightly acidic soils; if your soil is strongly alkaline, plan for acidifying amendments guided by the soil test.

Shade is the defining cultivation step for tencha. The aim is to substantially reduce direct sunlight for several weeks before harvest to increase amino acids and reduce bitterness.

  • Traditional method: build a shading structure over rows using bamboo frames and light-blocking cloth. Shade cloth with 70–90% light reduction is commonly used for tencha; choose a level based on trial and leaf response. Start shading about two to three weeks before the first harvest flush and keep shaded until final pick for that flush.
  • Live shade: interplanting fast-growing shade trees is possible but harder to manage for consistent light reduction and may introduce pests; for small experimental blocks, live shade can be trialled.
  • Uniformity of shade is critical — patchy shade produces inconsistent flavour and colour.

Watering and Fertility

  • Irrigation: keep soil evenly moist during shading and leaf development. Avoid waterlogging; frequent shallow wetting is preferable to infrequent deep flooding when plants are young.
  • Fertiliser: do a soil test first. Apply balanced nutrition focused on nitrogen for leaf growth, but manage timing so heavy N applications are not made right before harvesting shaded leaves since nutrient imbalances affect flavour. Incorporate organic matter (compost, well-rotted farmyard manure) to improve micro-nutrients and soil structure.
  • Micronutrients: zinc, boron and magnesium can influence leaf colour and quality. Correct deficiencies based on leaf and soil analysis rather than routine blanket feeding.

Pruning and Canopy Management

Regular pruning maintains a dense, low canopy that suits hand-plucking of young shaded shoots. Start with formative pruning after establishment to create a multi-branched framework. Later, perform cycle pruning to encourage annual flushes and maintain bush height suitable for shading and harvest. Remove deadwood and maintain air movement within the canopy to lower disease pressure.

Pest and Disease Management

Integrated pest management (IPM) is the practical approach:

  • Monitor regularly for common pests: tea mosquito bug, thrips, mites and caterpillars are common sucking and chewing pests. Use pheromone traps or sticky traps where available to monitor populations.
  • Encourage natural enemies: maintain floral strips and avoid broad-spectrum insecticides that kill predators and parasitoids.
  • Use selective products only when thresholds are breached; prefer biorational products, horticultural oils and soaps for soft-bodied pests where effective.
  • Fungal diseases: grey blight and leaf spots can become worse in humid, poorly ventilated shaded blocks. Keep canopy open, remove infected material and use copper-based sprays or approved fungicides only when needed, following label directions.
  • Quarantine: avoid bringing plant material from unknown sources that may introduce pests or diseases to your block.

Harvest Timing and Handling

Tencha requires the youngest, tender leaves from shaded shoots. Harvest timing matters for flavour and colour:

  • Pick only the fine flushes (typically the terminal bud and one or two youngest leaves) while still tender. Avoid older, tough leaves.
  • Harvest early in the morning when leaves are cool; handle gently to avoid bruising, which degrades colour and increases oxidation.
  • Transport leaves to the processing area quickly. Tencha processing benefits from steaming fresh material within a few hours of harvest to halt oxidation.

Processing to Tencha

Processing differs from ordinary green tea to preserve leaf structure for later grinding:

  • Steaming: promptly steam leaves to stop enzymatic oxidation. Steam time must be enough to inactivate enzymes but not so long as to cause excessive softening — small-scale producers should trial times and adjust to local steam conditions.
  • Cooling and drying: after steaming, cool leaves and dry gently to a moisture content that allows de-stemming without brittleness. Tencha is not rolled like sencha; avoid the rolling/tearing stage used for other green teas.
  • De-stemming and de-veining (karakuri): remove stems and large veins so that the final product is pure leaf. This step is labour-intensive but essential for smooth matcha texture. Mechanical de-stemmers designed for tencha or hand-sifting with trained workers can be used.
  • Grinding: tencha is traditionally stone-ground to a very fine powder (matcha). For small producers, consider collaborating with a local mill operator or cooperative with a suitable stone mill. High-quality grinding is critical for texture and mouthfeel.

Quality Control and Food Safety

Consistency is vital when commanding premium prices. Implement simple quality checks for colour, moisture and foreign material. Keep processing areas clean, control moisture to prevent mould and document each batch so you can trace any quality issues back to field practices.

  • Position matcha as a premium, traceable product: buyers pay for proven origin, processing care and consistent colour/flavour.
  • Start small and refine: process small batches to learn shading times, steaming profiles and de-stemming methods before scaling up.
  • Partner with specialty tea buyers, cafés or co-operatives that understand matcha grading. Transparent farm-to-mill stories help premium positioning.
  • Explore value-added options: single-origin matcha, culinary vs ceremonial grades, and small-batch packaging can capture higher margins if quality supports it.
  • Record costs carefully: shading, labour for careful plucking and de-stemming, and access to suitable milling are the main cost centres. Make decisions about in-house processing vs toll-milling based on scale and quality control needs.
