Site and Soil

Choose sites with access to irrigation and moderate microclimates—valleys, north-facing slopes or areas with some shade and less exposure to midday heat. Avoid heavy waterlogging and exposed ridgelines that stress plants.

  • Soil: well-drained, deep soils with good organic matter. Ideal pH is mildly acidic; target pH 4.5–6.5. If your soil is alkaline, consider acidifying measures (organic mulches, acidifying fertilizers) and test before conversion.
  • Water: regular moisture is critical, especially during establishment and shading period. Drip irrigation gives better control and reduces disease risk.
  • Wind protection: hedgerows or windbreaks reduce leaf scorch and help maintain humidity for the shaded crop.

Variety Selection

Matcha-quality tencha needs varieties that produce tender flushes with good leaf texture and a favorable balance of amino acids (theanine) and catechins.   • Timing: start shading 2–4 weeks before the targeted plucking date. Hotter climates may need shorter shading to avoid heat stress; cooler moist periods can allow longer shading.
  • Materials: use 70–90% light-reducing shade netting on temporary structures. Traditional methods use straw roofs but nets are lighter and easier to handle.
  • Installation: erect frames over rows or beds so shading is uniform. Keep good ventilation under the shade to prevent heat buildup and disease.

Plucking: When and How

Quality tencha requires careful plucking: pick only the youngest, unfurled leaves and bud—commonly the bud plus one or two young leaves, depending on variety and season. Avoid plucking older or heavily sunburnt shoots; they reduce tencha quality.

  • Pluck early in the morning after leaves are dry to limit moisture carrying into processing.
  • Handle leaves gently and transport to processing quickly. Tencha is steamed to halt oxidation soon after plucking; delays degrade quality.

On-Farm Processing: Turning Leaves into Tencha

Processing facilities for tencha need to be close to the field to minimise time between pluck and steaming. The core steps differ from black tea: steaming instead of withering and firing, followed by cooling, stripping (removal of stems), gentle drying and storage prior to grinding into matcha.

  • Steaming: immediate steaming (short-duration, high-temperature steam) stops enzymatic oxidation and locks in green colour. Steaming machines must match throughput; over-steaming gives a cooked flavour, under-steaming allows oxidation.
  • Cooling and pressing: after steaming, leaves are cooled and briefly pressed to remove excess water but not rolled or oxidised.
  • Drying: use low-temperature drying to reach safe moisture content while preserving colour and aroma. Avoid high temperatures that brown the leaf.
  • De-stemming and polishing: remove stems and veins to produce only leaf tissue (tencha). This is labor-intensive but essential—grinding stems produces gritty, off-flavours in matcha.
  • Storage: store tencha in airtight, low-oxygen and cool conditions before grinding. Quality degrades with heat and light; many processors freeze or refrigerate prior to stone-grinding.

Grinding to Matcha

Grinding tencha into matcha is a specialized step. Traditional stone mills give the best particle size and mouthfeel, but are slow. Industrial mills exist but need investment and hygiene to produce food-grade powder. Many growers supply tencha to independent grinders/processors rather than grinding themselves.

Pest and Disease Management

Common tea pests and fungal diseases can also affect tencha: blister blight, looper caterpillars, aphids and nematodes. Integrated pest management (IPM) is the best approach.

  • Monitor regularly and release beneficial insects where possible.
  • Use targeted sprays only when thresholds are exceeded, and prefer soft chemistry near harvest to avoid residues.
  • Maintain good drainage, avoid overhead irrigation late in the day, and remove diseased material promptly to reduce fungal pressure.

Quality Control and Grading

Quality parameters for tencha include leaf tenderness, colour, absence of stems, absence of foreign matter, and aroma. For matcha, particle size and taste balance (umami vs astringency) matter. Keep records of harvest dates, shading duration and processing conditions—the traceability helps secure premium buyers.

Selling Options and Value Chains

Tencha production targets value-added markets. Consider these practical selling routes:

  • Local processors/grinders: many small processors will buy tencha rather than growers investing in grinding equipment. Build relationships and arrange quality checks before contracts.
  • Cooperatives and farmer groups: pooling tencha from multiple growers helps reach minimum volumes for processors, improves bargaining power and enables shared investment in processing facilities.
  • Direct to specialty buyers: specialty tea shops, restaurants and craft food producers may pay premiums for traceable, single-origin tencha; you will need consistent quality, food safety practices and packaging standards.
  • Contract growing: work out pre-harvest contracts that specify shade duration, pluck standard and acceptable moisture—this reduces market risk.

Practical Tips from Field Experience

  • Start small: trial tencha on a portion of your tea area or as a block crop to learn shading and processing before scaling up.
  • Invest in proximity to processing: time from pluck to steam is the biggest quality factor; keep facilities as close as possible or work with mobile steaming units.
  • Record-keeping: log shading dates, fertilizer, irrigation, pests and processing parameters—buyers pay for traceable quality.
  • Food safety: follow basic hygiene and residue management to access higher-value markets; tests for pesticide residues can be required by buyers.
