On-farm processing to tencha

Traditional tencha processing differs from common green tea. Key steps are aimed at minimising oxidation and removing stems/veins.

  • Fixing (steaming): Immediately after plucking, leaves are steamed to halt oxidation. Short, even steaming preserves green colour and amino acids.
  • Cooling: Spread steamed leaves thinly and cool quickly to avoid sweating and over-softening.
  • De-stemming and Deveining: Tencha requires removal of coarse veins and stems. This can be done by hand on small lots or with specialised leaf processors. Clean removal is essential; stems give bitterness and must be minimised.

  • Keep simple records of shade duration, fertiliser, harvest dates and processing steps—buyers of specialty teas will ask for this information.
  • Invest in durable, cleanable shade structures and a reliable steaming setup—post-harvest control is where quality is made or lost.
