Why grow tencha (matcha leaf) in the Cauvery Basin?

Tencha is not a separate variety but a production and processing target: tea leaves grown under shade and processed into a steamed, destemmed dried leaf that is stone-ground to produce matcha powder. The income per kilogram of finished matcha can be much higher than ordinary black or green tea, so tencha is worth considering for small and medium growers prepared to invest in shading, harvest timing and post-harvest handling.

Site selection and soil

Choose a site with good drainage and partial elevation variation (gentle slopes) to avoid waterlogging. Tencha prefers:

  • Acidic to neutral soils (slightly acidic is typical for tea). Test pH and correct with lime only if needed.
  • Deep, friable soils with good organic matter. Prioritize soil structure over quick fertilizer fixes.

Pruning and canopy management

Regular pruning keeps the bush in a productive plucking zone and encourages frequent, even flushes:

  • Formative pruning in the early years to establish a low, dense canopy.
  • Cyclical pruning every couple of years to renew plucking surfaces and remove old wood.
  • During shading, avoid heavy pruning just before harvest since you need a full, evenly shaded canopy.

Pest and disease control

Shaded conditions can increase the risk of fungal diseases (e.g., blister blight) and certain pests. Practical management:

  • Monitor regularly for disease symptoms and implement cultural controls first (prune to improve airflow, remove diseased material promptly).

Processing into tencha (on-farm or contracted)

Processing is where quality is made or lost. Tencha processing differs from ordinary green tea:

  • Steaming: Immediately steam harvested leaves to arrest oxidation. Timing should be short and controlled; excess steaming changes flavor and color.
  • Cooling and drying: After steaming, cool and pass to the destemming/deveining step. Tencha keeps the leaf flat rather than rolling—traditional tencha is gently dried into flat leaves.
  • De-stemming and de-veining: Remove stems and veins to get the soft leaf tissue that yields a smooth matcha texture and color. This step is labor-intensive but critical for quality.
  • Drying and milling: Dry to stable moisture levels for storage. For matcha production, tencha is stone-ground or milled into a fine powder. Many growers send tencha to specialist stone mills or collaboration mills to get the fine, low-heat grind matcha demands.

If you cannot process on-farm, contract with a reliable local factory or co-operative that understands tencha specifications: shading details, rapid steaming, and careful destemming.

Post-harvest handling and quality control

Maintain hygiene and moisture control from field to mill. Key quality checks:

  • Color: bright, deep green is the aim; dull or brown indicates oxidation or improper shading/processing.
  • Aroma and taste: sweet, umami notes indicate good theanine content; bitterness points to over-steaming or poor leaf selection.
  • Particle size (for final matcha): finer is smoother in cup. Stone-milled matcha is premium for texture and flavor.

Marketing and selling tencha/matcha

Matcha is a specialty product; your marketing approach should reflect that:

  • Decide whether you will sell tencha leaf to processors or finished matcha. Finished matcha fetches premium but requires reliable milling partners and food-safety standards.
  • Certifications (organic, traceability, Good Agricultural Practices) are valued by specialty buyers—factor the costs and management into your plan.
  • Build relationships with local specialty tea buyers, cafés, and regional exporters. Demonstrate consistency in shade period, processing time, and sensory samples.
  • Small batches and direct sales (farmgate or online) work well for high-grade matcha. Invest in clear labeling about harvest date, provenance, and production method.
  • Consider co‑operatives for shared access to milling facilities and collective marketing to reach international specialty markets.

Economics and risk management

Producing tencha for matcha is labor- and management-intensive. Balance potential higher returns against these realities:

  • Plan for additional costs: shade structures, labor for careful plucking, steaming/destemming needs, and access to milling.
  • Run small trials before converting large areas—test varieties, shading densities and processing partners to learn what commands the best price in your local buyers’ market.
  • Diversify: keep some area in regular green tea or mixed crops to smooth cash flow while you develop matcha markets.

Practical checklist for the first season

  • Test soil and source clonal cuttings from a reputable nursery.
  • Install shade structures on a pilot block and monitor plant response.
  • Plan harvest logistics: crew, early morning picking, covered transport to steaming facility.
  • Arrange processing: on-farm steaming or contracting, and confirm milling options for final matcha.
  • Prepare basic marketing materials: samples, provenance story, and clear quality specs for buyers.
