This guide gives practical, field-tested steps for establishing, growing and marketing wasabi, with emphasis on systems that work outside its native mountain-stream habitat.

Choose the right variety

Commercial wasabi growers usually plant true wasabi cultivars rather than substitutes made from horseradish. Consider these well-known cultivars when sourcing planting material:

  • Daruma – Widely used, vigorous, good rhizome size.
  • Mazuma – Selected for root quality and uniformity.
  • Shimane – Performs well in cooler, controlled systems.

Buy certified disease-free rhizomes or tissue-cultured plantlets from reputable suppliers. Do not rely on seed saved from supermarket paste; that will not be true wasabi.

Site and system selection: open-bed vs. flow-through

Wasabi needs:

  • Cool temperatures: target daytime 10–20°C and nights near 5–10°C if possible.

  • Inadequate shade or too much sun – Causes leaf scorch and reduced rhizome quality.

Track costs carefully: labor for handling and cleaning rhizomes is significant, so plan for efficient harvest and post-harvest workflows.
