Introduction

Tencha is the steamed, de-stemmed green leaf that is later stone-ground into matcha. Producing tencha is more about growing and handling leaf to preserve colour and limit oxidation than about specialty marketing alone. In Punjab you will be adapting a crop that traditionally thrives in cool, humid regions. Success depends on choosing the right site and management to mimic those conditions as much as possible.

Is tencha suitable for Punjab?

Punjab is not a traditional tea region: summers are hot and winters can be dry and cold. However, small-scale, high-value production is possible where growers can provide shade, irrigation and careful leaf handling. Start with pilot plots, learn processing steps, and be prepared to manage microclimate and pests more intensively than in classic tea areas.

Variety and planting material

Tencha comes from Camellia sinensis. For matcha-style leaf you want young, tender shoots with fine texture. Two practical approaches:

  • Obtain clones or seedlings of Camellia sinensis var. sinensis that are known for green tea production (Japanese or Chinese green-tea clones). Work with a research station or reputable nursery—do not rely on random seedling mixes.
  • If clones are unavailable, trial locally adapted tea material from established tea areas in India (seek planting material from experimental stations). Whatever source you choose, start small and observe adaptation.

  • Spacing: use close spacing for a high-density, bushy canopy (practical spacing is tighter than commodity tea; many small-scale producers plant to a hedge system that facilitates frequent plucking and encourages many young shoots).
  • Pruning: establish bushes with formative pruning in the first 1–2 years to create a dense plucking table 30–60 cm high depending on system. Regular maintenance pruning stimulates new flushes and makes hand-harvest practical.
  • Inter-row management: keep walkways and access for harvest and shade structures.

Nutrition and soil management

Fertiliser needs depend on soil tests. General practical points:

  • Work in organic matter annually (compost, green manures) to improve water holding and nutrient buffering.
  • Nitrogen supports leaf growth and green colour—balanced applications timed before main flushes are common practice. Avoid excessive nitrogen late in the season before harvest; aim for even, steady growth.
  • Micronutrients (especially magnesium and iron) influence chlorophyll; correct deficiencies based on testing.

Pest and disease management

Pests and diseases in Punjab may differ from traditional tea regions. Monitor regularly and practice integrated pest management (IPM):

  • Scout for common chewing and sucking insects; remove heavy infestations by pruning and spot treatment rather than broad applications.
  • Keep plantings healthy—stressed plants attract pests and produce lower-quality leaf.
  • Use biological controls where possible and consult local extension services for pesticide approvals and timing that won’t taint delicate green leaf.

Harvesting for tencha

Quality starts at harvest. Tencha-grade leaf requires:

  • Young, tender flush—usually the top 1–2 leaves with bud, picked by hand.
  • Shading for 2–4 weeks before the intended harvest window to increase sweetness and reduce bitterness.
  • Quick handling—harvest in the cool of morning when possible, and move leaf to on-farm processing promptly to avoid wilting and oxidation.

Tencha processing differs from orthodox green-tea processes because the goals are to prevent oxidation and leave leaf in broad, de-stemmed flakes. Basic steps you can pilot on-farm:

  • Steaming: Immediately steam fresh leaves to halt oxidation. Commercial tencha is normally steamed (short, controlled steaming). For experimental batches, steam small amounts to find the right timing for your leaf—over-steaming will damage colour and flavour; under-steaming allows oxidation.
  • Cooling: Spread leaf thinly after steaming to cool quickly.
  • Drying: Remove surface moisture without frying or roasting. Controlled low-heat drying to reach stable moisture content is needed.
  • De-stemming: Traditional tencha removes veins and stems after steaming/drying, leaving the soft leaf blade. This can be done by hand or with equipment at a small scale; stage carefully to avoid over-fragmenting the leaf.
  • Tencha storage: Keep dry, cool and away from light and odours. Only stone-grind into matcha when you have final buyers or small-batch retail plans; ground powder oxidises faster.

Note: In some green-tea systems pan-frying (fixation) is used instead of steaming. For true tencha and matcha, steaming is traditional and gives the right enzyme inactivation profile.

Quality control and market considerations

  • Colour, aroma and texture matter. Tencha should be vibrant green, with a sweet, umami character and minimal bitterness.
  • Keep small test lots and adjust shading, harvest timing and steaming parameters until you get consistent results.
  • Consider partnerships with speciality tea processors or stone-mill operators if you want to market finished matcha; many buyers require consistent labelling and traceability.

Practical tips for Punjab growers

  • Run a small trial for at least two seasons before committing land widely—leaf quality and pest dynamics will only become clear with time.
  • Invest in shade infrastructure and reliable irrigation before expanding. These are the two biggest constraints in a hot climate.
  • Keep detailed records: clone, shade duration, harvest date, steaming time, and buyer feedback. Iterative improvement is vital.
  • Seek technical help from tea research institutions, horticulture departments or experienced green-tea processors when possible.
